Regular readers will recall The Great Baked Bean Disaster of 2006 in which I failed at correctly parboiling the beans to achieve optimum softness, as well as screwing up the accompanying brown bread.

This weekend, my parents were in town and thoughtfully brought me a bag of yellow-eyed beans, which are ubiquitous in the Maritimes but difficult to find in Montreal. This time, I did it right and made a big tasty batch of beans just like I used to eat back East.

Of course, I’ll be saving the beans for tomorrow as we’re going out tonight to visit some friends for the The Amazing Race finale and don’t want to, well, you know.

  1. What a coincidence! I’m trying to make baked beans at this moment, just as I came across this post, from the recipe my mom always uses back home in New Brunswick. It’s my first attempt. Wish me luck.
